National Brownie Day



Did you know there is a National Brownie Day? Well, there is and today is it. Grab yourself a brownie and feel no guilt. I love an excuse to have chocolate and I wholeheartledly embrace this celebration!

In the meantime, this recipe is a favorite at our house - rich and gooey brownies the kids can never get enough of.

Decadent Brownies
Makes one 9x13 pan

2 sticks unsalted butter
2 cups granulated sugar
1 teaspoon vanilla extract
4 large eggs - slightly beaten
3/4 cup dark cocoa powder
1 cup flour

Preheat oven to 350 degrees F. Put butter into 9x13 pan and place in oven until butter is melted.
Pour butter into a large bowl and add sugar. Stir until well blended. Add vanilla and eggs and stir well. Add cocoa powder and blend until smooth.
Sift in flour and stir gently until combined.
Pour into prepared pan and bake for 25 to 30 minutes or until set but not stiff - don't overbake!

Beef: It's What's For Dinner - The Giveaway


It's here! Today is the Beef: It's What's For Dinner Giveaway day.

Before we get to the giveaway I want to share links and a couple photos for other beef recipes we made this week.

Veggie Wednesday: Earthbound Farm Launches Videos


It's no secret that I love Earthbound Farm. Myra Goodman's Food to Live By has quickly become one of my most treasured cookbooks and I don't think there's any better baby spinach available on the market. As if that wasn't enough, they've now launched videos featuring Myra Goodman herself.

You can access the videos HERE and see what Myra has to say about baby greens and watch the making of her famous (and delicious!) Maple Almond Granola. I've made this and it's so good, you don't want to miss this video.

Charlie! Charlie! Charlie! Book Review and Giveaway


Way back in 1999,Google, in its infinite wisdom, decided they didn't want their employees falling asleep halfway through the day because of poor choices at lunchtime. They wanted fresh, energy producing foods to be prepared for their workers and they hired Charlie Ayers, former caterer for The Grateful Dead, to do it. He did that and more, and when he left in 2005, he was serving up meals to 1,500 people a day and overseeing 10 cafés and 150 employees.

Now on the verge of opening his own restaurant, Calafia Café and Market a Go Go, in Palo Alto, California, Charlie Ayers has also released a new cookbook, Food 2.0 - Secrets From the Chef Who Fed Google.

This book is perfect for a Deadhead, food lovin', organic eatin', Internet junkie like me. I totally relate to everything written and feel much more relaxed about my food choices. I always feel like there's a hard line there between vegetarian and omnivore, organic and non-organic, but Charlie has set down a brand new line somewhere in-between it all that just makes SENSE. He urges everyone to "go organic" without beating us over the head with dos and don'ts. There's just common sense and Charlie's own preference, followed up with the reminder that we all need to do what is right for ourselves.

Charlie has a real-life no-nonsense "parent" approach to many things, especially about frozen food - stuff I've been doing for years, but was afraid to share for fear that the hardcore "only from fresh" crowd would shun me. From his feelings on olive oil and his "4 best herbs to grow at home" (the very four I have growing right now) to the section on pasta and his thoughts on why we should eat organic, we are very like-minded. This was almost like reading about myself, except that the recipes are so superior to anything I've created thus far and there were several things I didn't know about food.

I can't think of one person who shouldn't own this book. It's 250 pages jam-packed with all you really need to know about feeding yourself and your family very well.

From Caroline Kligge, one of the fearless leaders of the Greater Reading Vegan Society. Caroline says, "Last night I made this soup and it was so delicious so I thought I'd share it with everyone, since a lot of people seem sick with allergies right now and could use some soup."

Vegan Chik'n Noodle Soup

2-3 T Olive Oil
2 carrots- peeled and diced
2 parsnips- peeled and diced
1 small onion- finely diced
4 scallions- diced
2 stalks celery- diced
6 cups vegetable broth (I love Imagine No-Chicken Broth, it's the best)
pepper to taste
1-2 cups textured vegetable protein chunks (can be found at Echo Hill Country Store, and beyond)
1/2 lb eggless flat noodles (try Light n Fluffy macaroni dumplings)
1/2 tsp dried dill weed

Heat oil in a large pot, and add carrots, parsnips, onion, and celery. Cook over medium heat for 5 minutes or until vegetables are tender.
Add broth, pepper, scallions, and bring to a boil. Add the TVP chunks and noodles, return to a boil, reduce heat and simmer 10 minutes or until noodles are tender. Add dill. Enjoy.
