Caramelized Mushroom, Onion, Asparagus and Extra Sharp White Cheddar Omelet
I love to make omelets because they are quick, simple, and you can put whatever you are craving inside. I like my omelets with one egg because I love the really thin egg layer; my husband on the other hand, prefers a thicker egg layer so I make his with two eggs. I was craving an omelet for breakfast recently so I went in search of ingredients. I found some asparagus, mushrooms, onions, and extra

Jalapeño Chicken Sausage, Mushroom, Smoked Black Pepper White Cheddar, and Tomato Potato Crusted Quiche
What a mouthful the title of this recipe is but I am telling you, it was FANTASTIC. I wanted to make a quick and easy dinner that would appeal to both me and my husband (my kids don't eat eggs - ugh). I had some chicken jalapeño sausage, mushrooms, onions, tomatoes, and spinach as well as some smoked black pepper white cheddar cheese in the refrigerator so I thought they would make a quiche - I

Poached Eggs on Roasted Garlic French Bread with Bacon, Asparagus, and Tomatoes
Do you like eggs? Asparagus? Tomatoes? Bacon? If so then... You. Must. Make. This. Recipe!!My son had a play date after school so I had time to make a special lunch just for me. I roasted the bread, asparagus, tomatoes, and bacon in the oven. I layered the bread with the bacon, asparagus, and tomatoes then served a poached egg on top. It was truly mouth watering and I enjoyed every single bite. I

Baked Potato with Egg, Extra Sharp Cheddar, and Canadian Bacon
When I saw this recipe on Cathy's site, Wives with Knives, I knew instantly that I would be making it. While my kids enjoyed the Baked Cinnamon Mini Donuts with Maple Glaze, my husband and I gobbled up these amazing baked potatoes stuffed with extra sharp cheddar, Canadian bacon, an over easy egg, topped with green onions. They were so simple to make and they tasted fantastic! We both loved them

Chakchouka

I'm still buzzing with ideas for meals to cook from my trip to the Lebanon last week but with a weekend of work ahead I know I'm not going to be able to spend much time in the kitchen.
This spicy egg dish which I cooked for the Guardian Student Cookbook I wrote back in the summer will have to do in the meantime.
Cooking eggs with tomatoes, chillies and sometimes peppers is popular all over North Africa, the Eastern Mediterranean and the Basque country but this particular version originated in Tunisia. I love the way the egg whites leach into the sauce marbling it red and white.
Serves 2-4
3 tbsp olive oil
1 medium to large onion, peeled and sliced
3 small or 2 medium peppers, quartered, seeded and sliced
2-3 cloves of garlic
1 1/2 tsp ground cumin
1/4-1/2 tsp hot pimenton, paprika or chilli powder
1 x 400g tin chopped tomatoes - or 400g fresh tomatoes, skinned and 1 tbsp tomato paste
2 tbsp chopped coriander (optional)
4 eggs
Salt and pepper
Feta and pitta bread to serve (optional but good)
You’ll also need a large frying pan preferably with a lid or some foil
Heat the oil in a frying pan, add the sliced onion and peppers and cook for about 10-15 minutes until they begin to soften. Stir in the crushed garlic and cook for another minute or two then add the cumin and pimenton, paprika or chilli powder and coriander, if using and cook a minute more. Tip in the tomatoes, stir and leave over a low heat for another 10-15 minutes until the sauce is thick and jammy. Check the seasoning adding salt and pepper to taste. Make four hollows in the surface with a large tablespoon then crack an egg into each hollow (or crack it in a saucer then slide it into the sauce). Cover the pan with a lid or a large piece of foil and carry on cooking until the whites are lightly set but the yolks are still runny. Serve with warm pitta bread with some extra coriander sprinkled over the top. Some crumbled feta is also really nice with it.

Poached Eggs on Toast with Roasted Tomatoes, Caramelized Mushrooms, and Shaved Parmesan
I saw a picture of this recipe in a Real Simple magazine earlier in the summer. I didn't get the recipe but the picture stayed in my mind and I knew I would eventually try to recreate it. I finally did this last weekend for my husband and I and I am so glad I did. It was WONDERFUL! I toasted the pieces of leftover French bread in the oven with the sliced tomatoes while I caramelized the mushrooms

Bacon, Egg, and Toast Cups
I saw this recipe on the Martha Stewart website and decided to give it a try. She made several egg cups at once using a muffin tin but I was only cooking for myself so I used a Pyrex custard cup and only made one. It was really, really easy to make and tasted amazing. I loved the soft yolk with the crisp bacon and toast. I will be making this again when we have house guests... it's a perfect way

Canadian Bacon, Green Chile, & Cheddar Quiche with a Shredded Potato Crust
My husband was going to help our friends move so I made this quiche to give him a filling and hearty breakfast for the heavy lifting he was going to be doing all day long. I really love the potato crust because it gives the quiche a great flavor without all the fat from a regular pastry crust. The green chiles tasted fantastic with the Canadian bacon and cheddar. This quiche is perfect for

Peasant Omelette with Potatoes, Mushrooms, Bacon, and Cheddar
When I was growing up there was a restaurant in my town called The Kitchen. It had so many amazing breakfasts but my very favorite was the Peasant Omelette. It was a very thin omelette filled with potatoes, cheese, bacon, and green onions. It was simple, hearty, and delicious! I wasn't in the mood to cook a big dinner (again) so I made omelettes. I cooked up some baby potatoes with onions and
